Chocolate

FirstFlora produces organic cocoa (certified by IBD: Brazilian Biodynamic Institute) rainforest shadow grown and with local labour. The plantation is on the "Cocoa Coast" sixty kilometres from the capital city Ilheus home town of the novelist Jorge Amado. Production area is approximately 30 hectares with the system "Cabruca" (in the shadow of the rainforest  as safeguarding the biodiversity). Also we have a subsidiary production of cloves, cashew, coconut, cinnamon and coffee. 
 
The definite, strong flavour of the cocoa is born from the rich red soil of Bahia. It’s Forastero cocoa-type typically buttery and with a low yield per hectare. Fermentation  scrupulously takes place in boxes of fine wood where cocoa will develop all its 500 aromatic precursors and the drying is only by the sun complying to the highest standards and using the best tools for quality-control technology. Only the best beans are selected and transported to Italy where they are hand roasted according to size,  blended with ingredients that are not refined, without soy lecithin and without overheating which could affect the quality. Finally a long conching enhances the velvety feel and the aroma of FirstFlora chocolate, also giving it a mirror shine. 
 
Sales of chocolate support the protection of the FirstFlora Reserve: hectares of dense Rain Forest west of Itacaré in the state of Bahia, Brazil. The Reserve is part of the catchment area of Rio de Contas, which has the world record for tree biodiversity by 454 different species of trees per hectare of which 53% endemic.
 
We are part of the cooperative Cabruca of Ilheus, consisting of about sixty members including a Sem Terra Movement (Squatters). The production of the cooperative is approximately 200 tonnes of organic cocoa with the system "Cabruca".
