Eight days from A to Z to learn how to make chocolate
A journey to the roots of the food of the gods, to live an unforgettable experience; touch with your own hands, Tastes and flavours of the romantic Brazil of Jorge Amado. A real journey through the ancient and modern techniques of cultivation of cocoa and production of chocolate in the world renowned forest for tree biodiversity.
Day 1
- Arrival in Salvador de Bahía
- Transfer at the Reserva Natural Janaina along the green road full of breathtaking landscapes. Travel of about 6 hours including the ferry across to the magnificent Bahia Todos los Santos
- Dinner and lodging at Fazenda.
Day 2
- Visit and get to know the cocoa plantation.
- Study tropical botany and general peculiarities of cocoa.
- Harvest the cocoa pods.
- Demonstration of grafting.
- Selection, cleaning, roasting, and separation of the husks of cocoa beans previously harvested, fermented and dried by FirstFlora employees.
Day 3
- Second day of collecting the cocoa pods.
- Production of cocoa juice.
- Lesson on organoleptic processing of cocoa to obtain fine chocolate.
- Breaking of pods and rotating fermentation.
- Milling and after conching of beans roasted the day before.
Day 4
- Movement of cocoa in fermentation.
- drying of fermented cocoa crop from the previous week.
- Continue the conching.
- Afternoon excursion to the tropical forest with the guide of Corrado Meotti, the rangers and a ornithologist and biologist.
Day 5
- Conching and shaping of cocoa.
- Chocolate production. FirstFlora produce seven varieties of chocolate, a 40% milk chocolate, a 45% milk chocolate with grains of cocoa, a 57% milk chocolate with coffee and guaranà, a 60% dark chocolate , a 70% dark chocolate, a 75% dark chocolate with cashews and a 85% dark chocolate.
Day 6
- Back to Salvador de Bahia (approximately 6 hours).
- Afternoon and evening free in the vibrant and colourful Salvador. The city lies between green hills and the endless beaches of the Bay of All Saints. Salvador is considered the cultural capital of Brazil with its exuberant mix of cultures, races and pace. The old town has some of the most beautiful, well preserved colonial buildings in Brazil.

- Free day in Salvador de Bahia. Lunch and dinner are not included.
